About the location:

This five-star hotel remains the centre of attention. This beautiful grade II listed building has 100 rooms, 41 residential apartments, a ballroom, five meeting rooms, a destination spa with 8 treatment rooms, hammam, steam, sauna and vitality pool, and a food and beverage offering including Mei Ume (Chinese/Japanese cuisine) and Rotunda (all day dining, afternoon tea & bar).
Four Seasons Hotel London at Tower Bridge is looking for a Breakfast Demi Chef de Partie for our main kitchen, which will include our new Signature Restaurant Opening in 2026.
The Demi Chef De Partie Role
As a Demi Chef de Partie, you will assist the Chef de Partie in ownership of a specific section within the kitchen, leading and mentoring a team of Commis Chefs to ensure the consistent delivery of high-quality dishes. You will play a key role in the preparation and execution of menus across multiple outlets, including: Rotunda Lounge & Bar, In-Room Dining, Banqueting, and our new Signature restaurant.
What You Will Do
- Work with the Chef de Partie to supervise a section of the kitchen, ensuring all food preparation and presentation meets Four Seasons standards.
- Train, guide, and support Commis Chefs in your section, fostering a collaborative and efficient working environment.
- Assist in the development of new dishes and contribute ideas to menu planning.
- Maintain high standards of hygiene and cleanliness in accordance with HACCP, COSHH, and food safety regulations.
- Ensure proper stock rotation and assist with inventory control.
- Work closely with senior chefs to ensure smooth kitchen operations during service periods.
What You Bring
- Minimum of 2 years’ experience in a professional kitchen, ideally within a luxury hotel or fine dining environment.
- Strong foundation in fresh food preparation and a passion for high-quality ingredients.
- Working knowledge of Food Safety, HACCP, and COSHH procedures.
- Food Hygiene Certificate (CIEH Level 2 or equivalent) preferred.
- Ability to work a variety of shifts including mornings, evenings and weekends.
