This beautiful grade II listed building and former HQ of the Port of London Authority has 100 rooms, 41 residential apartments of which 31 units are in a FS run transient rental program, a stunning ballroom which has hosted the inaugural Reception of the United Nations, 5 meeting rooms, a stunning destination spa with 6 treatment rooms, hammam, steam, sauna and swimming and vitality pool, and a fantastic Food and Beverage offering including La Dame de Pic (French cuisine, 2*Michelin Star), Mei Ume (Chinese/ Japanese cuisine) and Rotunda (all day dinning, afternoon tea & bar).

Four Seasons Hotel London at Tower Bridge is looking for a Demi Chef de Partie to join the team.

The role:

As aDemi Chef de Partie, you will assist the Chef de Partie in ownership of a specific section within the kitchen, leading and mentoring a team of Commis Chefs to ensure the consistent delivery of high-quality dishes. You will play a key role in the preparation and execution of menus across multiple outlets, including: Rotunda Lounge & Bar, In-Room Dining, Banqueting, and overseeing the Staff Cafeteria team.

What you will do:

  • Work with the Chef de Partie to supervise a section of the kitchen, ensuring all food preparation and presentation meets Four Seasons standards.

  • Train, guide, and support Commis Chefs in your section, fostering a collaborative and efficient working environment.

  • Assist in the development of new dishes and contribute ideas to menu planning.

  • Maintain high standards of hygiene and cleanliness in accordance with HACCP, COSHH, and food safety regulations.

  • Ensure proper stock rotation and assist with inventory control.

  • Work closely with senior chefs to ensure smooth kitchen operations during service periods.

What you bring:

  • Minimum of 2 years’ experience in a professional kitchen, ideally within a luxury hotel or fine dining environment.

  • Strong foundation in fresh food preparation and a passion for high-quality ingredients.

  • Working knowledge of Food Safety, HACCP, and COSHH procedures.

  • Food Hygiene Certificate (CIEH Level 2 or equivalent) preferred.

  • Ability to work a variety of shifts including mornings, evenings and weekends.
