What Is Forbici? Stretching the limits of Neapolitan pizza to bold new heights. Biga by name. Bigger by nature. Our signature three-generation Biga dough is prepared to a not so secret recipe: 5.0 pH | 12 hours proofing | 24ºC. Towering crusts, incredible flavour, and a uniquely risen pizza. True to Naples, we cut our pizzas four-ways — always — and with scissors.
