Our beloved. Head Brewer, who's been steering the ship here at Floc. Towers for over 4 years is moving on to pastures new, so we're looking for a Head Brewer / Production Lead to join our small team in Canterbury.

We’re an independent brewery focused on modern hop-forward beer with drinkability and consistency at the centre of everything we do. Since starting in Margate in 2020 we’ve grown into one of the UK’s leading modern breweries, producing around 3,000hL annually alongside our taproom and bars in Canterbury, Folkestone and Margate.

This is a hands‑on role for someone who genuinely cares about beer quality, process and standards. We’re looking for someone who can help lead day-to-day production while improving systems, consistency and efficiency across the brewery.

You’ll be heavily involved in all aspects of brewery production, including brewing, dry hopping, cellar work, packaging, CIP, stock management and quality control.

This is not a purely managerial role, we’re looking for someone who enjoys being on the brewery floor and leading by example.

Responsibilities

  • Leading day-to-day brewery production
  • Wort production and brewhouse operation
  • Cellar management including dry hopping, transfers, carbonation and conditioning
  • Packaging including canning, kegging and quality checks
  • CIP and maintaining exceptional cleanliness standards throughout the brewery
  • Managing production scheduling alongside the director
  • Raw material and packaging stock management
  • Monitoring beer quality, DO management and process consistency
  • Maintaining brewery equipment and troubleshooting issues
  • Training and supporting production staffHelping improve systems, workflows and efficiency across the brewery
  • Ensuring health & safety procedures are followed at all times

Requirements

  • Commercial brewing experience in a production brewery
  • Strong understanding of modern hop-forward beer production
  • Experience with packaging operations and cellar managementHigh standards of cleanliness and organisationStrong attention to detail and consistency
  • Comfortable working in a physically demanding environment
  • Ability to work independently within a small team
  • Calm under pressure with good problem-solving skills
  • Forklift licence beneficial but not essential
