With up to 80 covers at dinner and 40 at lunch, the kitchen is well-positioned for further growth as the lunch trade develops. This is a hands-on leadership role reporting directly to a supportive General Manager (a former Head Chef), working with owners who bring extensive hospitality expertise and a forward-looking approach to future projects. You will join an established brigade of local staff, where strong leadership, high standards, and a collaborative spirit are essential.

Package
- Salary: £17.50 per hour (OTE £50,000, plus approx. £3,000 TRONC)
- Accommodation: Live-in available; four rooms with shared kitchen, lounge and bathroom, provided free of charge

The Role
- Lead and inspire an 18-person kitchen team across a busy, quality-focused service.
- Maintain consistency, GP targets (low 70s), and high standards of cleanliness and organisation.
- Deliver seasonal menus, daily specials, and accessible à la carte dishes.
- Support the development of new lunch offerings and contribute to year-round events.
- Ensure smooth service across key stations, including starters, desserts, larder, frier, pizza, and KP support.
- Uphold excellent food safety standards, including Level 3 food safety as a minimum requirement.
About You
- Ambitious, energetic and capable of holding your own in a busy kitchen.
- Minimum 2 years' experience and confident managing all aspects of service and prep.
- Community-minded, personable, and able to integrate with a largely local team.
- Strong organisational skills and attention to paperwork, compliance and cleanliness.
