Mount Royal Hotel Edinburgh by the Unlimited Collection is looking for a passionate and experienced individual with a talent for leadership and a love for hospitality to join our team as a Bar Manager.
The Bar Manager will be responsible for:
- Taking responsibility for the daily operations of the hotel’s Bar teams, ensuring exceptional service and smooth execution.
- Supporting the Food & Beverage Manager in developing business plans, identifying commercial opportunities, and delivering against financial targets.
- Attending hotel operations meetings, providing updates, and assisting the Events Team in planning through weekly staffing and resource allocation.
- Overseeing bar service and ensuring a clean, organised, and professional front- and back-of-house environment.
- Updating beverage, wine, and cocktail lists in line with trends and guest feedback.
- Leading stock management and inventory systems, conducting regular spot checks and audits.
- Planning and implementing seasonal beverage menus, working with suppliers and involving team input.
- Ensuring suppliers meet delivery agreements, exploring new vendor partnerships, and sourcing ethical and quality beverages.
- Being visible on the floor during busy periods, supporting the team and enhancing the guest experience.
- Supporting the Events Team with tastings and special occasions, ensuring bar service meets function requirements.
- Monitoring and upholding hygiene and cleanliness standards at all bar stations.
- Analysing performance data to ensure beverage operations perform within budget and operational targets.
A successful Bar Manager will have:
- Previous hospitality experience at managerial level.
- Previous 4-star hotel or high-volume bar experience.
- A customer-focused approach with the ability to anticipate guest needs.
- Excellent team-leading skills and the ability to coach and motivate.
- The ability to communicate clearly and concisely across all levels.
- Excellent organisational skills with a strong attention to detail.
- A confident and courteous manner, even under pressure.
- A strong customer service background and proven ability to resolve complaints effectively.
- A well-organised, outgoing, and service-minded personality.
- The ability to multitask, troubleshoot and adapt in a fast-paced environment.
- A good command of English is essential; a second language is advantageous.
- A proactive and commercially aware mindset, focused on delivering service excellence.
