If you're looking for somewhere to sit in the office checking spreadsheets all day, this probably isn't for you. At Fatto a Mano, everyone is hands-on during service. Nobody takes a back seat. From our Kitchen Porters to our Head Pizzaiolo, everyone works together to deliver an exceptional experience for our customers. It's this people-first approach that has helped us grow from one small Brighton pizzeria into an independent business across London and Brighton.

The Role

We make proper Neapolitan pizza, but we're really in the people business. We're looking for someone to lead one of our London restaurants, not someone to 'manage' it. Someone who'll build a team people love being part of, creating the sort of restaurant where customers can feel the atmosphere the moment they walk through the door.

Key Responsibilities

  • Recruit, develop and retain a high-performing management and Waiting Team.
  • Deliver exceptional standards of food quality, service and cleanliness.
  • Manage labour, costs, sales and profitability in line with business targets.
  • Build a positive, respectful culture where people can thrive.
  • Deliver an outstanding customer experience by leading every service from the floor, not from the office.
  • Ensure compliance with health & safety, food safety and company procedures.
  • Work closely with the wider management and support teams to continually improve the business.
  • Lead the day-to-day operation of your pizzeria while maintaining a clear 365-day operational plan.

About You

We don't expect perfection, but we do expect someone who leads with humility, cares about people and understands that the best General Managers never stop learning. Every great leader has a story. Maybe you started as a Kitchen Porter, Waiter, Pizza Chef or Supervisor. Whatever your journey, we'd love to hear it.

  • Has proven experience as a General Manager within a high-quality hospitality environment.
  • Leads from the floor, not from the office.
  • Makes difficult days feel easier for the team.
  • Is comfortable doing every job in the building when the team needs support.
  • Cares deeply about standards without becoming obsessed with rules.
  • Understands that exceptional hospitality is built on hundreds of small moments.
  • Is passionate about coaching, developing and inspiring others.
  • Is commercially confident and understands budgets, labour, margins and KPIs.
  • Is organised, calm under pressure and able to make good decisions during busy services.
  • Takes ownership, is accountable and leads with integrity.
