About Fatto a Mano

Fatto a Mano is an independent pizzeria business built on quality, care and people. We believe great food and great hospitality come from well-supported teams, clear values and leaders who are present on the floor, not behind a desk. We operate multiple pizzerias across London and Brighton & Hove, supported by a central production kitchen and support office.

The Role

We are looking for an experienced General Manager to lead one of our pizzerias. While this role will be based at a single location, we are not recruiting for a specific site at this stage. The final location will be discussed and agreed with the successful candidate, based on experience, strengths and business needs. As General Manager, you will be fully accountable for the performance of your pizzeria, leading your team, driving commercial results and ensuring every customer receives a warm, consistent Fatto a Mano experience.

Key Responsibilities

  • Full responsibility for the day-to-day running of your pizzeria
  • Lead, develop and retain a strong management and front-of-house team
  • Maintain excellent standards of food quality, service and cleanliness
  • Manage labour, costs and margins in line with business targets
  • Create a positive, respectful and high-performing team culture
  • Ensure compliance with health & safety and company procedures
  • Work closely with the wider management and support teams
  • Contribute to the wider business through collaboration and best practice sharing

  • Proven experience as a General Manager in a high-quality hospitality environment
  • A hands-on leader who is comfortable doing every job in the building — from leading service to cleaning toilets when needed
  • Leads with humility and respect, earning trust through actions, not job titles
  • Present on the floor, especially during busy services, and leads by example at all times
  • A people-first manager who supports, coaches and develops their team
  • Commercially confident and comfortable managing budgets, labour and KPIs
  • Organised, reliable and calm under pressure
