We’re looking for a dedicated and ambitious Demi Chef de Partie to join our award-winning team at The Fish Hotel. We are a family-owned, 4 AA Red Star property featuring the acclaimed seafood restaurant Hook (2 AA rosettes) serving sustainable Cornish seafood. Our guests can also enjoy our vibrant lounge and bar areas, offering gourmet hotdogs, small plates, cocktails, and delicious regional tipples.

As a Demi CDP, you’ll work as part of a close-knit, supportive brigade under the guidance of Michelin-starred Culinary Director Martin Burge, giving you the perfect environment to build confidence, refine your core skills and progress your career. You’ll be joining a calm, well-organised and well-equipped kitchen where quality, teamwork and consistency are at the heart of everything we do. What you’ll be doing:

  • Supporting your section to deliver consistently high-quality dishes
  • Preparing ingredients and assisting with mise en place and service
  • Working closely with senior chefs to learn and develop
  • Maintaining excellent food hygiene and kitchen cleanliness
  • Helping to keep service smooth, efficient and professional
  • Contributing to stock control, prep and organisation

What we’re looking for:

  • Experience working with fresh, seasonal produce in a quality-led kitchen
  • A strong work ethic and commitment to learning
  • A reliable, positive and professional approach
  • Good communication and teamwork skills
  • A desire to grow and progress in a structured, supportive environment

The details:

  • £35,692 per year
  • Plus service charge (£3,000–£3,500 OTE)
  • Approximately £39,000 total earnings
  • 48 hours per week
  • Meals on duty and uniform provided
  • Live-in accommodation available
