Fallow was founded by three individuals in May 2019, two chefs Jack Croft and William Murray, and career hospitality entrepreneur James Robson. We are seeking an experienced and driven Breakfast Head Chef to lead our morning kitchen operations at Fallow. This is an exciting opportunity for a talented chef ready to take the next step in their career, bringing refined technique, creativity, and strong leadership to deliver an exceptional breakfast offering. As Breakfast Head Chef, you will take full ownership of our breakfast service, building on Fallow's reputation for innovation, sustainability, and outstanding quality. You will lead from the front, inspiring your team while ensuring flawless execution every morning.

Key responsibilities:

  • Lead and manage the breakfast kitchen team, ensuring exceptional standards of food preparation, presentation, and service.
  • Maintain rigorous quality control, consistency, and attention to detail across all dishes.
  • Manage ordering and stock rotation in line with Purchasing Team guidelines.
  • Continuously assess and improve kitchen processes to maximise efficiency and quality.
  • Collaborate closely with the General Manager and front-of-house team to deliver a seamless guest experience.
  • Train, mentor, and develop junior chefs, fostering a positive and high-performing kitchen culture.

About you:

  • Proven experience as a Sous Chef in a high-end, fast-paced restaurant is essential.
  • Ready to step into a Breakfast Head Chef role with strong leadership and organisational capability.
  • Passionate about sustainability and modern, innovative cooking techniques.
  • Commercially aware, with experience managing GP, labour costs, and stock control.
