Your purpose will be: As Pastry Chef for Gordon Ramsay at The Mere, you will play a key role within our 5‑star culinary brigade, delivering exceptional pastry craftsmanship that reflects the precision, creativity, and high standards synonymous with both Gordon Ramsay Restaurants and Fairmont Hotels & Resorts. You will take ownership of the pastry section, producing outstanding desserts, afternoon tea items, and baked goods that elevate the guest experience across our luxury dining and event offerings. With a passion for flavour, artistry, and consistency, you will contribute to menu development, uphold impeccable hygiene standards, and support the growth of junior chefs, ensuring every plate leaving your section embodies excellence.
Responsibilities
- Prepare and present high-quality pastry items in line with 5-star standards.
- Produce desserts, afternoon tea items, breads, and plated desserts as required.
- Maintain consistency, portion control, and exceptional presentation.
- Assist in menu development, tastings, and seasonal menu changes.
- Ensure all mise en place is prepared efficiently and to specification.
- Maintain excellent food hygiene, health & safety, and HACCP standards.
- Minimise waste and support cost control within the pastry section.
- Work collaboratively with the wider kitchen team during service.
- Support and mentor junior pastry chefs and commis where required.
Please note that we believe in flexibility and multi-skilling, and you may be asked to do different tasks from time to time to enable us to meet the needs of our guests and colleagues.
Qualifications
- Proven experience as a Pastry Chef de Partie in a 5-star hotel or fine-dining environment.
- Strong knowledge of classic and modern pastry techniques.
- Experience with afternoon tea and high-end dessert service preferred.
- High attention to detail and presentation.
- Ability to work calmly under pressure in a fast-paced environment.
- Strong time management and organisational skills.
- NVQ Level 2/3 or equivalent professional qualification (preferred).
- Flexible approach to working hours, including weekends and evenings.
