Travelbound is looking for an Assistant Cook to join our seasonal programme at Chateau Du Molay in Normandy, France. The role will be based at the historic 18th‑century chateau, servicing school guests and teachers from France, the UK, and abroad.
Responsibilities
- Prepare lunch and dinner for high‑volume guest service, including platter and plated service.
- Follow the Catering Manager/Head Chef direction and manage prep work with knowledge of menus, allergens, and dietary requirements.
- Run the kitchen independently on the manager’s days off, ensuring smooth service.
- Assist with pot‑washing, kitchen cleaning, stock management, deliveries, and monthly stock takes.
- Maintain high standards of health, safety, and cleanliness, with focus on HACCP, COSHH and French regulations.
- Mentor and develop junior team members.
Qualifications
- Previous experience as a commis chef in a busy commercial, high‑volume kitchen.
- Experience in overseas or hotel‑based kitchens is a bonus.
- Excellent knowledge of Food & Hygiene, HACCP, COSHH and ability to adapt to French regulations.
- Ability to cater for a wide range of dietary requirements.
- Comfortable working fast‑paced, short service times, both individually and as part of a team.
- Conversational English essential; French speaking a bonus.
- Minimum age 18 by the start of the season; EU passport or work visa required.
