As Assistant Restaurant & Bar Manager you will always be busy looking after the team and our guests so this role will require stamina, energy and enthusiasm in spades. We have a fantastic opportunity for the right person to be part of something special in our Restaurant Camellia. Our perfect candidate will be someone who has a passion for Food and Beverage and who knows how to communicate this to the team. Our beautiful location and fabulous grounds set in the Sussex countryside provides a wonderful environment to work in.
The Assistant Restaurants and Bars Manager will be responsible for:
- Supporting the day to day operation of the outlet to ensure a flawless service for our guests across all Food and Beverage outlets.
- Working with all Food and Beverage Outlet Managers/Assistant Managers to optimise opportunities to hit and exceed budgeted targets.
- Stepping in for Assistant Managers in their absence in all areas including service, resourcing and product offering.
- Working as part of a team and constantly evaluating, training and improving the experience our guests receive.
- Maintaining the Enoround Machine in the Guest cellar to ensure all wines are fresh and rotated, while being on trend.
- Ensuring the Cellar tastings are delivered to a high standard and managing the diary with all wine tastings being costed to achieve our budgeted GP.
- Maintaining the cellar to ensure all beverage lines are in stock to agreed par levels and business demands.
- Providing administration support for the F&B outlets to ensure smooth running of the departments.
- Being involved with the learning and development of our F&B team members.
- Establishing and maintaining effective employee relations across departments.
- Being proactive to guest feedback and directing the team accordingly.
- Being adaptable to taking on new small projects with the support of the Food and Beverage Manager, which must be rolled out in the agreed time frame.
- Assisting F&B outlets in creating and executing plans for department sales, profit and staff development.
- Assisting the F&B outlets with table plan implementation to maximise the number of covers within the dining areas.
- Remaining aware of business trends, systems and practices within the food and beverage industry to improve the profitability of the department.
- Taking Duty Manager shifts and conducting them in line with guidelines.
- Actively engaging weekly on Hubbub (our internal communication platform) to communicate positive F and B changes and Extra Miler moments.
