Shift patterns: Early – 06:00 to 13:30, Mid – 11:30 to 19:30, Late – 12:00 to 20:00
Meal Service Times:
- Breakfast – 07:00 to 08:15
- Lunch – 12:30 to 13:15
- Dinner – 18:00 to 19:00

About the Role: We’re currently recruiting two experienced Sous Chefs to join our friendly catering team at Prince William of Gloucester Barracks. You’ll work as part of a team of four, delivering high‑quality, freshly prepared meals for around 160 service personnel. This is an exciting opportunity for skilled chefs who take pride in their craft and want to progress within a supportive environment at ESS, part of Compass Group UK & Ireland.
Key Responsibilities:
- Support the Head Chef with day‑to‑day kitchen operations
- Prepare, cook, and serve high‑quality meals to service standards
- Supervise and motivate kitchen staff, ensuring consistency and teamwork
- Maintain excellent food hygiene and safety standards
- Assist with menu planning, stock control, and allergen management
- Deliver quality and efficiency across all shift patterns
What We’re Looking For:
- Previous experience essential in a similar chef role (Sous Chef or Senior Chef de Partie)
- Qualifications desirable (City & Guilds/NVQ or equivalent)
- Strong communication, leadership, and organisational skills
- Passion for great food and quality service
- Flexible and reliable, able to work early, mid, and late shifts
