Covent Garden is getting its first taste of ERGON and we're looking for the person to lead it. Not somebody to simply manage operations. Somebody to create a culture.
ERGON puts Greek gastronomy and the Mediterranean way of life at the centre of everything it does.
Its delis and restaurants already span Greece, the UK, Cyprus and the Middle East, while its Houses have so far stayed closer to home in Greece - until now, the first one outside it is opening right here in London.
This is a unique opportunity to run a brand-new property from the ground up.
The ideal candidate is an experienced, hands-on hospitality leader with a genuine passion for Greek culture and hospitality and strong commercial acumen.
They can move comfortably between strategy and execution, between budgets and guest conversations, between long-term thinking and daily operations - building and inspiring a team that will define the guest experience of ERGON House London from day one.
About the role
- Lead every department to the standards we set across the group.
- Build, recruit, train, and inspire the opening team.
- Create a culture of genuine hospitality, accountability, and excellence.
- Oversee guestrooms, housekeeping, maintenance, front office, guest experience, and all hotel facilities.
- Work closely with the food and beverage teams to ensure a seamless guest journey across the hotel and rooftop restaurant.
- Manage guest feedback with professionalism, warmth, and care.
- Set the tone for cleanliness, atmosphere, service, and operational discipline across the entire property.
- Own the daily rhythm of the house and ensure every detail is executed consistently.
- Manage revenues, forecasting, budgets, labour costs, and operational performance.
- Ensure full compliance with UK hospitality, health and safety, employment, and licensing regulations.
- Build strong relationships with suppliers, partners, travel advisors, corporate clients, and the local community.
- Oversee reservation systems, distribution channels, and booking platforms.
- Work closely with the leadership team on future growth opportunities across the UK and internationally.
- What we look for
- A degree in Hospitality Management, Business Administration, Economics, or a related field.
- Extensive senior leadership experience in hospitality (typically 10+ years), ideally within boutique hotels, lifestyle hotels, or mixed-use hospitality concepts.
- Previous experience opening or repositioning a hotel is highly valued.
- Strong understanding of rooms operations, revenue management, guest experience, and commercial performance.
- Excellent leadership and team development skills.
- Fluent English, written and spoken.
- Additional languages are an advantage.
- Strong organisational skills and clear prioritisation.
- An analytical mindset combined with strong emotional intelligence.
- A natural host who understands that hospitality is built through people, details, and consistency.
