We’re looking for a Senior Sous Chef to balance creativity with precision, help lead the kitchen team, turn ideas into dishes and keep the kitchen firing on all burners at The Hoxton, Edinburgh. Reporting to the Executive Chef, you’ll be responsible for managing the day‑to‑day kitchen related activities, supporting with the management of all kitchen teams and back‑of‑house F&B spaces.
Patatino is our all‑day Italian trattoria serving fresh pasta, wood‑fired pizzas, and all the spritzes and Italian wines you could wish for. What you’ll do:
- Support the Executive Chef in leading a large, dynamic kitchen team.
- Step up and run the show when our Executive Chef is away, keeping the kitchen buzzing and standards sky‑high.
- Lead from the front when it comes to people, giving thoughtful feedback through performance reviews and coaching, supporting development, championing growth, and building a team that keeps getting better.
- Create, execute, and produce top‑notch food with a constant eye on the highest quality standards, presentation, and flavour.
- Nurture and develop the talent of the kitchen team, creating an environment that brings out the best in them and where they can be themselves.
- Make sure things are running without a hitch, orders and deliveries are coming and going as needed, our service is smooth as chipotle butter, and our food hygiene standards are sky‑high.
- Work with our Executive Chef on ideas and techniques that make our kitchen a creative, ever‑changing environment.
- Ensure statutory compliance in all food and drink related areas.
- Think outside the box and drive standards, always striving to find efficient solutions whilst maintaining the quality and integrity of the menu.
