Ellis Mack is working with this well-established Edinburgh operator with a fantastic reputation and busy daytime trade. If you are an eager, passionate Sous Chef who wants to create outside the box, this role is for you. This kitchen prides itself on using the best local ingredients available with healthy options in mind, leaning towards vegetarian/vegan dishes. This is an extremely busy restaurant based in Edinburgh and will need a chef that has worked in this kind of operation previously.
Role/Responsibilities:
- Ensure that the section is up to date with all information within the business.
- The completion of all food ordering relevant to business levels.
- To ensure the volume of food cooked meets business levels and ensure minimum wastage.
- To ensure that all food preparation and production is to the required standard.
- To ensure that any chefs are trained, and duties clearly explained to minimise wastage.
- All food correctly labelled and dated and duly stock rotated.
- To ensure that surrounding kitchen areas and fridges are always clean and sanitised.
Skills/Experience:
- Advanced knowledge of culinary skills.
- Experience working within a professional kitchen at sous chef level.
- Excellent knowledge of Food Hygiene.
- Demonstrate a genuine passion for food and fresh ingredients.
- Ability to deliver a smooth service.
