El Pastor, the critically acclaimed family of transportive Mexican restaurants in London, launched El Siete, an agave-forward cocktail bar beneath its Soho restaurant on Brewer Street, in March 2026. The drinks programme is firmly rooted in agave culture, shaped by years spent in Mexican palenques, cantinas and destination bars. Expect best-in-class margaritas, original agave-based cocktails and exceptional classics, seven of each, plus seven non-alcoholic options, alongside a discerning selection of sipping mezcales and tequilas.

The Bartender Role:
- Experience working as a bartender in a quality, cocktail-focused bar environment
- Excellent knowledge of agave spirits, with a genuine passion for margaritas, mezcal, tequila, and seasonal cocktails
- Pride in delivering consistently high-quality drinks with attention to balance, technique, and presentation
- Confidence working to spec while bringing care and personality to every serve
- Good knowledge of menus, ingredients, and allergens, and the ability to talk guests through the drinks with ease
- A warm, friendly approach that helps create a great atmosphere at the bar
- Strong command of the English language and clear communication during service
- Following opening and closing procedures accurately and consistently
- Adherence to all Food Safety and hygiene standards
- A strong team ethic, respect for colleagues, and a positive, hands-on attitude
