El Pastor, the critically acclaimed family of transportive Mexican restaurants in London, will launch El Siete, an agave-forward cocktail bar beneath its Soho restaurant on Brewer Street, in March 2026. El Siete ("The Seven") references El Colmillo, the cult Mexico City nightclub opened by Sam Hart and Crispin Somerville in the 1990s. The drinks programme is firmly rooted in agave culture, shaped by years spent in Mexican palenques, cantinas and destination bars. Expect best-in-class margaritas, original agave-based cocktails and exceptional classics, seven of each, plus seven non-alcoholic options, alongside a discerning selection of sipping mezcales and tequilas. Hidden behind a discreet entrance, the low-lit, neon-inflected 60-cover lounge promises a warm, fun and deliciously bewitching night out in the heart of Soho.

The Bar Supervisor Role

  • Experience in a supervisory bar role, or at least one year working in a high-volume, quality-driven bar environment
  • A genuine interest in cocktails and drinks, with pride in delivering consistently excellent quality in every serve
  • Supporting and motivating colleagues on the bar, helping to keep service flowing smoothly and positively
  • Confidence following opening and closing procedures and supporting the wider team during busy services
  • Good knowledge of menus, ingredients, allergens, and the stories behind the drinks you are serving
  • A warm, friendly approach with guests, contributing to a great atmosphere and memorable experience
  • Strong command of the English language and clear communication on the floor
