As F&B Concept Specialist, you will be responsible for developing, refining, and evolving food and beverage concepts across our portfolio — from lifestyle hotels to premium destinations. You’ll work closely with operations, design, marketing, and senior leadership to ensure each concept is distinctive, commercially viable, and operationally sound. The position is based full-time at our London Bridge Head Office, with occasional property visits.
The stage is set for something different. We don’t run conventional hotels; we build places with character and intent. What began as a small UK aparthotel portfolio has grown into a European collection recognised for design and atmosphere - and we’re now entering a new chapter. Locke leads with bold expression; Cove by Locke refines that same spirit into a quieter, more streamlined approach. Guests come to rest, work, or escape. Comfort is a given - great beds, hot showers, genuine service. But we aim to create moments that feel memorable and a little unexpected, bringing back the sense of mood hospitality often lost. This is our backdrop. We’re on an exciting journey; step on stage and play your part.
The Work In Your Hands
- Deploy F&B concepts for hotel openings and refurbishments, underpinned by robust business cases, P&L targets, and clear return on investment.
- Review and refresh existing restaurant, bar, and café concepts to improve revenue performance, margins, and operational efficiency.
- Conduct market and competitor analysis to identify commercially viable trends, whitespace opportunities, and scalable partnership potential.
- Define concept positioning, menus, pricing, service styles, and guest journeys, using menu engineering and cost controls to maximise profitability.
- Collaborate with chefs, operators, designers, branding teams, and external brand partners to deliver commercially sound, on-brand concepts.
- Support pre-opening projects and concept rollouts, ensuring cost discipline, readiness, and alignment to forecast performance.
- Ensure concepts align with brand identity, operational capability, and clearly defined financial targets, with accountability for post-launch performance.

- Proven experience in F&B concept development within hotels, hospitality groups, or restaurants.
- Strong commercial understanding of hotel F&B performance.
- Creative thinker with a strategic mindset and strong attention to detail.
- Confident presenting ideas to senior stakeholders.
- Experience working across multiple brands or locations is highly desirable.
