We are currently recruiting for a Senior Sous Chef to join our Iconic Rooftop Japanese Cuisine Restaurant and Bar 8 at The Londoner.
OverviewAn amazing opportunity to join our destination 8 at The Londoner. As Senior Sous Chef you will:
- Support the Head Chef in the implementation of the Signature Restaurant Concept.
- Support the Executive Chef in menu development, seasonal planning, and creative concept evolution.
- Lead and inspire the kitchen team, fostering a culture of excellence, discipline, and continuous learning.
- Oversee service to ensure flawless execution and consistency.
- Maintain the highest standards of food quality, presentation, and hygiene.
- Manage stock control, ordering, and supplier relationships with a focus on premium Japanese ingredients.
- Contribute to training, development, and performance management of junior chefs.
- Uphold all health, safety, and food hygiene regulations in line with 5‑star hotel standards.
Experience within a Japanese cuisine restaurant is essential for this role. A background in luxury hotels or Michelin‑level restaurants. Strong leadership skills and the ability to motivate and develop a diverse team. A calm, organised approach to high‑pressure service environments. A passion for craftsmanship, seasonality, and authentic Japanese flavours. Excellent communication and a collaborative mindset.
