We have an exciting opportunity for a Head Pastry Chef to join and help lead the culinary team at The London EDITION and award-winning Berners Tavern Restaurant. As Head Pastry Chef, you will work alongside our Chef Partner, Jason Atherton, and our Executive Chef. You will be responsible for leading the Pastry team on a daily basis. You will be innovative, resourceful, and ensure cost-effective management to maximise F&B profitability and maintain health & safety standards in the kitchen. You will guide the team, identify the developmental needs of others, and coach others to improve their knowledge and skills.
In this role, you will be heavily focused on Berners Tavern Restaurant kitchen operation and will also oversee the Room Service, Bar, and Banqueting pastry culinary operation. The award-winning Berners Tavern is a gastronomic gem in a truly breath-taking setting. We offer a contemporary British menu that is simple yet elegant, using the very best products in the British Isles. What we are looking for:
- Previous experience as a Head Pastry Chef in a high-quality restaurant or hotel
- Strong awareness of trends and seasonality of produce
- A highly creative approach to your work with excellent attention to detail
- Experience in maintaining and respecting brand-approved Look Book standards for guest amenities
- Proven ability to manage, train, and motivate a team
- Experience in managing staff costs, scheduling, and reviewing staff rotas and holidays
- Strengths in finances, purchasing, and menu costing
- A working knowledge of health and safety, compliance, and procedures
