Designed to serve both everyday visitors and major event audiences, Medlock Square will deliver high quality hospitality all week long and across the events calendar.

As Kitchen Manager, you'll support the smooth day-to-day organisation, administration, and compliance of the kitchen operation across Medlock Square. Working closely with the Head Chef and wider BOH team, you'll help ensure kitchens operate safely, efficiently, and in line with food safety and operational standards. This role is ideal for someone highly organised with strong kitchen operational knowledge, who enjoys supporting teams behind the scenes while maintaining high standards across compliance, systems, stock control, and kitchen administration.

You will be responsible for:

  • Kitchen Administration & Organisation
    • Support the day-to-day administration and organisation of the kitchen operation across multiple outlets and service areas.
    • Maintain kitchen documentation including prep sheets, checklists, recipe specifications, allergen records, and order sheets while ensuring all operational records are completed accurately and on time.
    • Support menu uploads and recipe management across relevant systems while helping maintain smooth communication between culinary, BOH, and operational teams.
  • Food Safety & Compliance
    • Support the delivery of safe, compliant, and well-organised kitchen operations in line with HACCP, food safety, and health & safety standards.
    • Assist with daily compliance checks including temperature monitoring, food labelling, stock rotation, and storage procedures while maintaining accurate kitchen records and documentation.
    • Support Health & Safety processes, kitchen risk assessments, and promote safe working practices across all BOH areas.
  • Stock Control & Kitchen Support
    • Support stock management and inventory processes across kitchen operations while monitoring food storage standards within fridges, freezers, and dry stores.
    • Assist with delivery checks, stock organisation, and maintaining operational readiness across BOH areas.
    • Help ensure kitchen spaces remain clean, organised, and efficient while supporting chefs and operational teams during busy services, matchdays, concerts, and event periods.
  • Team Support & Training
    • Support the onboarding and day-to-day development of BOH team members while helping maintain high operational and compliance standards across the kitchen operation.
    • Assist with training team members on the safe use of kitchen equipment, food safety procedures, and BOH standards while promoting a positive, collaborative, and professional kitchen culture.
  • Operational Support
    • Work closely with Head Chefs, Sous Chefs, and wider operational teams to support smooth service preparation and execution across all trading periods.
    • Assist with event preparation, kitchen coordination, and implementation of operational procedures while helping maintain efficient day-to-day BOH operations across multiple kitchens and outlets.

Skills, Knowledge & Expertise

  • Essential
    • Experience working in a professional kitchen, BOH, or kitchen administration role
    • Good understanding of food safety, hygiene, and kitchen compliance standards
    • Strong organisational and administrative skills
    • Ability to work in a fast-paced, high-volume environment
    • Good communication and teamwork skills
    • Confidence using basic computer systems and Microsoft Office
    • Understanding of stock control and food storage procedures
  • Desirable
    • Experience working within stadiums, arenas, hotels, or multi-outlet hospitality environments
    • Knowledge of allergen management and kitchen compliance systems
    • Experience supporting kitchen documentation and operational processes
    • Level 2 Food Hygiene qualification
    • Knowledge of HACCP and COSHH procedures
