About the role

We seek dynamic, guest‑obsessed operators who can build teams, lead from the front, and deliver service that matches the scale and ambition of Medlock Square. You’ll play a vital role in creating welcoming, memorable spaces for everyday guests and major event visitors alike. As Restaurant Manager, you will lead the operation of a premium, high-energy restaurant and bar, delivering exceptional service, strong team performance, and commercial success. This is a hands-on leadership role where you will be highly visible on the floor, setting the tone, pace, and energy of the venue. You will take ownership of the guest journey, ensuring every service reflects the ambition, quality, and experience expected of a flagship concept. Working closely with the Head Chef and wider leadership team, you will ensure the restaurant is consistently positioned as a must-visit destination within Manchester’s dining scene.

In this role you will:

  • Lead service and guest experience, delivering a consistently high-touch, premium standard
  • Build, lead, and develop a high-performing team, setting clear expectations and standards
  • Take ownership of day-to-day operations, including service flow, reservations, and staffing
  • Drive commercial performance through strong service delivery, upselling, and KPI management
  • Maintain high standards of compliance, safety, and operational excellence
  • Work closely with kitchen and wider teams to deliver a seamless, end-to-end guest experience
  • Contribute to continuous improvement, supporting new initiatives, launches, and enhancements

Skills, Knowledge & Expertise

Essential

  • Proven experience as a Restaurant Manager, General Manager, or Assistant General Manager in a premium or high-volume environment
  • Strong experience leading evening-led, high-energy service
  • Confidence working with VIP and high-expectation guests
  • Excellent leadership and people management skills
  • Strong commercial awareness, including labour control and KPI management
  • Strong organisational, communication, and decision-making skills
  • Calm and confident under pressure
  • Good understanding of licensing, health & safety, and food safety standards
  • Flexibility to work evenings, weekends, and event days

Desirable

  • Experience in a premium or concept-led restaurant environment
  • Experience supporting new openings or launches
  • Knowledge of reservations systems and POS platforms
  • Experience working within large, multi-stakeholder environments
