As BOH Manager (Head Kitchen Porter), you’ll lead the Kitchen Porter team and take ownership of back-of-house cleanliness, organisation, and operational support across the kitchen. This is a hands-on leadership role where you’ll ensure the kitchen environment runs smoothly behind the scenes — maintaining high hygiene standards, supporting service flow, and making sure the team is set up for success. You’ll play a key role in supporting chefs and ensuring the kitchen operates efficiently during both day-to-day service and high-volume event periods.

You will be responsible for:

  • BOH Operations & Standards
    • Lead the day-to-day operation of kitchen porter and stewarding activities across all back-of-house areas.
    • Ensure kitchens, wash-up areas, stores, and BOH spaces remain clean, organised, and service-ready at all times.
    • Maintain a continuous flow of clean equipment and support efficient kitchen operations.
  • Team Leadership & Development
    • Lead, support, and develop the Kitchen Porter team across all shifts.
    • Allocate tasks effectively, support recruitment and onboarding, and foster a positive, high-performing team culture.
    • Ensure appropriate staffing levels are maintained to meet operational demands.
  • Service & Operational Support
    • Work closely with chefs and operational teams to support smooth service delivery.
    • Provide hands-on support during busy periods, ensuring BOH operations remain aligned with service requirements and operational standards.
  • Compliance, Hygiene & Safety
    • Ensure all BOH operations comply with food safety, hygiene, and health and safety standards.
    • Maintain cleaning schedules and compliance records, promoting safe working practices and high standards of cleanliness throughout the operation.
  • Collaboration & Continuous Improvement
    • Collaborate with culinary and operational teams to improve processes, efficiency, and service support.
    • Provide operational feedback and contribute to continuous improvement across BOH operations.

Skills, Knowledge & Expertise

Essential

  • Experience in a Kitchen Porter or BOH role
  • Experience supervising or leading a team
  • Strong organisational and time-management skills
  • Ability to work in a fast-paced, high-volume environment
  • Good understanding of hygiene and safety standards

Desirable

  • Experience in large-scale or multi-outlet kitchens
  • Experience in event-led or high-volume operations
  • Knowledge of cleaning systems and BOH best practice
