What you’ll be responsible for:

  • Managing all aspects of food preparation, service and delivery within a seasonal retail catering environment to ensure an exceptional food service quality.
  • Ensuring the delivery of a high-quality product/offering to service meetings, events, customer requirements and market trends.
  • Complete food orders, menus costing and theoretical GP on all products to allow comparison to actual, whilst achieving target GP overall.
  • Ensure food hygiene and safety guidelines are adhered to at all times, in line with EHO regulation and local authority guidelines.
  • Leadership and management of a team of highly motivated permanent and seasonal employees to achieve KPIs and deliver exceptional customer service.
  • Development of the catering team through methods such as regular team meetings, 1:2:1, inductions and development plans.
  • Develop the service offering and deliver excellent customer service, look for best in class fresh, local produce.
  • Become renowned for quality of product and service within the region to develop new customer streams and return visitors.
  • Ensure all HACCP documentation is kept up to date at all times whilst maintaining/improving hygiene scores, upkeep and cleanliness of the kitchen, restaurant & associated stores.
  • Manage Health and safety in line with DCWW procedures (for both internal and external customers).
  • Engage with customers as an ambassador of Welsh Water.
  • Develop and regularly review operations manuals, service standards for the site, wastage, monthly food GPs staffing levels, costs and controls.
  • Responsible for EPOS updates, stock control and stock takes, supplier orders.
  • Be proactive in the development of menus, the food & beverage offer and events program and service delivery.
  • Support the delivery of a marketing communications plan to grow awareness, drive footfall and commercial revenue streams.
  • Contribute to an annual events programme in conjunction with other team members to grow visitors and revenue; and delivery of the programme to exceed budget.
  • Be operationally highly visible and active to undertake duty manager activities for the site.
  • Carrying out any other duties as required to meet business needs.

Who you’ll work with:

  • Internal: Head of Visitor Attraction Operations, Head of Visitor Attraction Strategy, Marketing and Communications, H&S, HR & finance team, Facilities management team, Any DCWW group using the VC as a meeting venue.
  • External: Local community & visitors, Volunteers and volunteer groups, Welsh Government, LAs, and other regulatory bodies, Visit Wales, regional tourism networks and businesses, NRW, conservation groups, angling clubs & RSPB, Contractors, Media.

About you:

Essential Knowledge, Skills and Experience:

  • Demonstrable experience in Catering/Cafe operations using fresh locally sourced produce.
  • Excellent customer service skills, from a customer focused background with the ability to communicate at all levels.
  • Knowledge of regulatory requirements associated with food hygiene licensing law, Premises licence, PMR, PRL, EHO, trading standards.
  • Proven track record of managing, developing and maintaining a team to meet customer and business needs.
  • Proven track record of growing income across a food and beverage operation.
  • Demonstrable experience of food service & food production in an establishment to a set standard, exceeding expectations and customer perception.
  • Develop and cost menus, manage food orders, and monitor theoretical vs. actual GP to stay within budget.
  • Manage operational controls, including tills, cash reconciliation, stock management, staffing levels, and cost controls.
