The successful candidate will have experience or a good understanding of butchery at a primary and retail level.
Responsibilities
- Check quality of primals and steaks against specifications
- Train and monitor the relevant people on:
- How to carry out checks against specifications
- Rectify/reject primals/steaks/joints
- Segregate potential claims/rejections
- Verify the claims/rejections making sure that:
- Claim/rejection is correct against specification
- Weights claimed/rejected are matching Hellenic weights
Qualifications
- Previous experience in butchery and/or butchery management
- Good understanding of cutting from carcass
- Strong attention to detail and manual dexterity
- Ability to work in a cold environment and stand for extended periods
- Commitment to health and safety standards
