We are transforming a three-story Victorian building into a dining sanctuary where the food defined by the slow-cooked, aromatic traditions of Lucknow is only half the story. Role Overview
The Senior Prep Chef plays a key role in supporting the kitchen by ensuring all preparation is completed to the highest standards ahead of service. This role is responsible for leading prep operations, maintaining consistency and quality, and supporting the wider BOH team through strong organisation and discipline.
In Your First 12 Months, You’ll…
- Ensure authentic execution of Lucknowi preparations, marinades, bases, and sauces
- Lead and organize daily prep schedules in line with service requirements
- Maintain consistency, quality, and accuracy across all prep items
- Train and guide junior prep chefs and kitchen assistants
- Ensure correct labelling, storage, and stock rotation (FIFO)
- Minimise waste through accurate prep planning and portion control
- Support Head Chef and Sous Chefs with service readiness
- Maintain excellent food safety, hygiene, and cleanliness standards
- Communicate effectively with senior kitchen leadership
- Lead by example in professionalism, attitude, and kitchen culture
What You Bring
- Experience as a Senior Prep Chef or strong Prep Chef ready to step up
- Solid understanding of Indian cuisine (Lucknow / Awadhi experience a strong plus)
- Excellent organisation and time-management skills
- Strong attention to detail and consistency
