The role of Sous Chef supports the Executive Chef Team and has a primary responsibility for overseeing and supervising production of food for DO & CO. You will work hard to promote the company’s culture, mission, and values. You will act as a team leader and motivator for the whole team using interpersonal skills and be a clear communicator. You will be responsible for supervising, training, evaluating, coaching, and counseling the team ensuring compliance with company standards.

Key Responsibilities:

  • Working closely with the Executive Chef team to ensure that consistent quality products are produced following all DO & CO standards.
  • Designing, developing, and presenting new menu designs as per the customers’ needs.
  • Managing and supporting the Kitchen team with all internal employee relations, agency usage, and recording of cost/hours.
  • Being a role model, ready to roll up your sleeves and lead the team in the absence of the Head Chef.
  • Instilling a culture of job pride and ownership and motivating the team to adapt to stressful situations.
  • Planning production to the daily schedule and ensuring the exceptional DO & CO quality is maintained.
  • Establishing production of recipes that align with the set pricing structure and customer budget.
  • Ensuring operations adhere to all SOPs and relevant Critical Control Points, Health and Safety, Food safety, and legal requirements.
  • Performing quality control checks to ensure specifications are met on raw materials and finished products.
  • Building and maintaining excellent working relationships with all departments.
  • Defining systems of working to ensure quality of product and instigating continuous improvement initiatives.
  • Driving success by proactively managing team performance and providing development opportunities.
  • Taking responsibility for all actions, supporting your team, and celebrating successes.

Qualifications:

  • Role model ability, leading a large team with a problem-solving mentality.
  • Previous experience as a Sous Chef.
  • Confidence in taking the lead and managing the department.
  • Passion for high-end cuisine and motivation to deliver exceptional service.
  • Well presented, professional individual with a positive attitude.
  • Ability to be a positive change champion for DO & CO.
  • Meticulous attention to detail and data-driven.
  • Strong relationships with the team, mentoring and motivating.
  • Clear and engaging communicator with strong written and verbal English.
  • Flexible in decision-making and handling change.
  • Great understanding and working knowledge of Operations.
