We are seeking an exceptionally skilled Pastry Chef to lead pastry operations at high‑profile international events. Reporting to the Executive Pastry/Executive Chef, you will be the pastry ambassador for DO&CO — ensuring technical excellence, creative patisserie, and consistent production across both central kitchen and on‑site event environments.
Responsibilities- Lead and manage the pastry department on‑site at international events; ensure DO&CO standards for taste, texture and presentation.
- Design and produce a range of pastries, plated desserts, entremets, petits fours, viennoiserie, plated desserts and showpieces appropriate for VIP and large‑scale events.
- Develop menus and seasonal dessert concepts aligned with event briefs and culinary direction.
- Train, mentor and upskill pastry team members; set standard recipes, mise en place and finishing techniques.
- Oversee technical production: chocolate work, sugar artistry, lamination, entremets, mousses and decorative techniques.
- Manage production schedules, quality control, portioning, yields and plating consistency.
- Coordinate ingredient sourcing, supplier relationships and inventory control for pastry supplies.
- Adapt recipes and workflows to varied on‑site kitchens, equipment and production scales.
- Maintain HACCP, allergen controls and stringent pastry hygiene standards.
- Proven experience as Head Pastry Chef or Senior Pastry role in high‑end restaurants, luxury hotels or premium events.
- Advanced patisserie skills across chocolate, sugar, laminated doughs, entremets and plated desserts.
- Strong leadership and training capability; experience managing multi‑national, temporary teams.
- Competence in menu development, costing and inventory management.
- Willingness to relocate to Vienna, Austria.
- Unrestricted ability and flexibility to travel extensively throughout EU and for extended periods to support global events.
- Passion for pastry craft, creativity and relentless attention to detail.
- Calm, adaptive and solutions‑oriented under pressure.
- Strong communicator and mentor with high standards of professionalism.
