Be part of an exciting new restaurant opening on Charlotte Street in the heart of Fitzrovia. Launching in late autumn 2026, Dila is an Eastern Mediterranean restaurant seen through the lens of a Londoner bringing together vibrant flavours, generous hospitality and exceptional produce.
We are looking for a passionate, skilled and enthusiastic Chef de Partie to join our opening kitchen team. Youll play an important role in bringing Dilas food concept to life, taking ownership of your section and ensuring every dish is prepared with consistency, care and attention to detail.
This is an exciting opportunity to join Dila from the very beginning, develop your skills and knowledge, work with exceptional produce and help establish the standards and culture of a brand-new kitchen in Fitzrovia.
About Dila
Spanning two floors, Dila will have approximately 50 covers on the ground floor and a further 70 on the first floor, including a private dining room, alongside a 40-cover terrace.
Designed for sharing, the menu centres around seasonal meze, vegetable-led dishes and charcoal grills, combining indigenous ingredients and spices from across the region with exceptional produce sourced from local farmers, growers, fishermen and producers across the UK.
The cooking is clean, ingredient-led and rooted in simplicity, allowing quality produce, bold flavours and thoughtful technique to take centre stage. Sustainability underpins our approach, from responsible sourcing and seasonality to a conscious effort to minimise waste throughout the kitchen.
About You and The Role
As a Chef de Partie at Dila, you will:
Take responsibility for your section, ensuring excellent preparation, organisation and consistently high standards throughout service
Prepare and cook dishes in line with Dilas recipes and standards, delivering exceptional quality, flavour, presentation and consistency
Develop a strong understanding of Dilas Eastern Mediterranean influences, ingredients and cooking techniques, including our meze, vegetable-led dishes and charcoal grills
Maintain excellent mise en place and anticipate the needs of your section to ensure smooth and efficient service during busy periods
Work closely with the wider kitchen brigade, supporting colleagues and contributing to a positive, collaborative and respectful kitchen culture
Support stock rotation, portion control and waste reduction, treating our ingredients and produce with care and respect
Maintain the highest standards of food safety, allergen management, cleanliness and Health & Safety across your section
Bring previous experience as a Chef de Partie or experienced Demi Chef de Partie within a quality restaurant environment, with strong technical skills, attention to detail and a genuine passion for food and ingredient-led cooking
