Job Purpose

The Kitchen Assistant plays a vital role in supporting the efficient and hygienic operation of the kitchen. This position ensures all kitchen areas, equipment, and utensils are maintained to the highest cleanliness standards, while also supporting food preparation, deliveries, and overall kitchen organisation. The role contributes directly to the guest and staff experience by maintaining a clean, safe, and well-organised environment, while fully complying with Health, Safety & Food Hygiene regulations and supporting sustainability initiatives.

Key Responsibilities

  • Kitchen Cleanliness & Portering
    • Maintain clean and organised kitchen, wash-up, and food preparation areas throughout the shift.
    • Promptly clear and process dirty crockery, utensils, pots, and pans.
    • Operate dishwashing equipment safely and effectively, ensuring all items are thoroughly cleaned, sanitised, dried, and stored correctly.
    • Carry out full kitchen portering duties, including the correct storage of clean equipment and utensils.
    • Fully clean down the dishwasher at the end of each shift, including draining, filters, and surrounding areas.
    • Clean sinks, cutlery trays, waste bins, and dishwashing areas regularly to prevent cross-contamination.
  • Deliveries & Stock Handling
    • Take responsibility for kitchen deliveries, including checking, signing, and verifying items against delivery notes.
    • Ensure all deliveries are promptly and correctly stored in line with food safety and stock rotation procedures (FIFO).
    • Maintain cleanliness and organisation of storage areas, including fridges, freezers, and dry stores.
    • Report any discrepancies, damages, or quality concerns to senior kitchen staff.
  • Cleaning & Hygiene
    • Follow and complete daily and weekly cleaning schedules to company Safety & Hygiene standards.
    • Carry out deep cleaning of the kitchen, including equipment, floors, walls, and hard-to-reach areas.
    • Take responsibility for the cleanliness and upkeep of the staff canteen, including clearing food and service equipment after meal periods, cleaning and sanitising tables, counters, and surfaces, and restocking and resetting the area for the next service.
    • Immediately respond to and clean spillages, breakages, and hazards to maintain a safe working environment.
  • Health, Safety & Compliance
    • Follow all company Health & Safety standards, including PPE usage, COSHH procedures, and safe chemical handling.
    • Ensure all food hygiene practices are adhered to, supporting compliance with legal and company standards.
    • Handle all kitchen equipment with care and report any faults or maintenance issues promptly.
  • Waste Management & Sustainability
    • Manage waste responsibly, ensuring correct separation of general waste, recycling, and food waste.
    • Support the hotel’s sustainability and waste-reduction initiatives.
  • General Support
    • Assist chefs and kitchen team members with basic food preparation tasks when required.
    • Work collaboratively with the wider kitchen and food & beverage team to ensure smooth service.
    • Carry out any additional reasonable duties as requested by management.
