Job Description
We are seeking an exceptional
Assistant Bar Manager to join the pre-opening team of Delano London.
Reporting to the Bar Manager and working closely with the Director of Food & Beverage, you'll help bring Rose Bar to life while supporting a connected beverage experience across Lana Lusa, Room Service and Private Dining.
You'll combine confident floor leadership, strong drinks knowledge and warm, intuitive hospitality with the energy and personality that define Delano.
What you'll do...
- Support the Bar Manager in the day-to-day operation of Rose Bar, ensuring service feels polished, energetic, personal and never scripted.
- Lead shifts and maintain a visible presence during service, setting the pace on the floor and stepping in wherever the team needs support.
- Help shape and consistently deliver the Rose Bar guest journey, from first welcome and drink recommendations through to farewell.
- Coach, motivate and develop bartenders and bar backs through hands-on leadership, clear expectations and in-the-moment feedback.
- Support recruitment, onboarding and training of the opening bar team, embedding service standards, product knowledge, cocktail execution and genuine hospitality.
- Work closely with the Bar Manager on cocktail development, beverage standards, tastings, menu knowledge and seasonal activations.
- Maintain excellent mise en place, opening and closing procedures, stock organisation and bar presentation throughout service.
- Support stock control, ordering, transfers, inventories, wastage management and beverage GP, helping protect quality and commercial performance.
- Coordinate closely with Lana Lusa, Room Service and Private Dining so beverage service feels connected across the hotel.
- Handle guest feedback confidently and resolve issues quickly, turning recovery moments into positive experiences.
- Support VIPs, events, late-night service and hotel activations while maintaining licensing, responsible service and Health & Safety standards.
- Act as Manager on Duty for the bar when required and support the wider Food & Beverage operation with a collaborative, one-team approach.
Qualifications
What we're looking for...
- You have strong supervisory or assistant management experience in a premium bar, luxury hotel, high-quality restaurant or lifestyle operation.
- You have excellent cocktail, spirits and beverage knowledge and are confident guiding both guests and team members.
- Previous pre-opening experience would be a real plus; you enjoy building standards, routines and culture from the ground up.
- You are a natural host and floor leader, combining attention to detail with warmth, personality and instinctive hospitality.
- You understand the commercial side of bar operations, including stock, wastage, beverage GP, labour and productivity.
- You coach by example, stay calm under pressure and know how to create energy without losing control of the operation.
- You are comfortable with POS, inventory and rota systems and are organised with opening, closing and cash procedures.
- You are flexible to work evenings, late nights, weekends and key hospitality moments.
