An exciting opportunity has become available for an experienced Traditional Pizza Chef to join a well-established countryside hospitality venue in Hertfordshire. This role centres around delivering exceptional artisan pizzas from a dedicated pizza van, catering predominantly for weddings, private events, and functions.

We are looking for someone with genuine traditional pizza experience who understands the craft from dough preparation through to service and has proven experience working with and maintaining a wood-fired oven.

The Role

  • You will take ownership of the pizza operation and play a key part in creating memorable guest experiences at weddings and events.
  • This is a hands-on position requiring strong preparation skills, organisation, and the ability to maintain quality during busy service periods.
  • You will be responsible for producing fresh dough, preparing ingredients, operating the wood-fired oven efficiently, and delivering consistently high standards of food quality and presentation.

Key Responsibilities

  • Prepare fresh pizza dough from scratch using traditional methods.
  • Manage dough fermentation, proving, portioning, and storage processes.
  • Operate and maintain a traditional wood-fired pizza oven safely and effectively.
  • Prepare and organise mise en place ahead of service periods and events.
  • Produce high-quality artisan pizzas consistently during busy wedding and function service.
  • Monitor stock levels and assist with ordering and stock rotation.
  • Maintain excellent food hygiene and food safety standards at all times.
  • Ensure the pizza van remains clean, organised, and presentation ready.
  • Work closely with the wider kitchen and events teams to deliver smooth service.
  • Assist with menu development and seasonal pizza offerings where appropriate.

Key Requirements

  • Previous experience as a Traditional Pizza Chef is essential.
  • Proven experience operating and maintaining a wood-fired pizza oven is essential.
  • Ability to prepare and manage pizza dough from scratch independently.
  • Experience working within events, weddings, hospitality, or busy service environments preferred.
  • Strong understanding of fermentation techniques and dough consistency.
  • Excellent organisation and time management skills.
  • Ability to work independently and take ownership of the operation.
