Workplace description: Set in stunning Northumberland countryside and its own scenic grounds, this privately owned mansion is only 20 minutes’ drive from Newcastle Airport and the vibrant city centre.
Main Duties and Responsibilities:
- Deputise in the Head Chef's absence.
- Ensure that all chefs des parties are familiar with the day's requirements.
- Ensure that the necessary stocks are on hand at the right quality and quantity.
- Maintain fair discipline and ensure that all staff are treated fairly and with commonly accepted courtesy.
- Keep timetables, leave rosters and attendance registers up‑to‑date.
- Adhere to all statutory and company hygiene regulations.
- Report and follow up on all maintenance problems promptly.
- Facilitate smooth communication between restaurant and kitchen.
- Distribute correct orders to each cook for the appropriate tables.
- Check each dish leaving the kitchen for quality, quantity, presentation and correct temperature.
- Ensure dining room/personnel are ready when delicate dishes are served.
- Carry out regular on‑the‑job training so subordinate staff perform duties correctly.
- Attend seminars and training courses as directed.
- Continuously develop knowledge of management methods and principles for future advancement.
Essential Criteria: You will ideally have both fine dining and banqueting experience (at 1/2 rosette level) and thrive at working in a busy kitchen environment.
