AKI is a contemporary Japanese restaurant and lounge bar, celebrated for its modern take on authentic Japanese cuisine and its elegant atmosphere.

We are opening a brand-new location in London, set in a stunning venue within a historic former bank.

We are looking for a talented and motivated

Sommelier who is excited to be part of a new project and help deliver the AKI experience in one of the world’s most dynamic cities.

  • The Job
  • Provide expert guidance to guests on wine and sake selections, enhancing their dining experience with insightful recommendations.
  • Serve wine and sake with precision, adhering to proper service standards, including decanting and using correct glassware.
  • Contribute to our dynamic wine list, suggesting new additions and supporting regular updates.
  • Manage wine stock levels, report low inventory, and assist with restocking and cellar organization.
  • Ensure proper wine storage, handling, and hygiene in accordance with health and safety regulations.
  • Support the team with ongoing training in wine knowledge, food pairing, and service techniques.
  • Assist with wine-related events, tastings, or promotions as required.
  • Stay informed on global wine and sake trends, regions, and varietals to continuously improve product knowledge and service confidence.
  • Deliver excellent customer service with a focus on attention to detail and guest satisfaction.
  • Collaborate effectively with the restaurant team to ensure smooth service and consistent standards.
  • The Requirements
  • Proven experience as a Sommelier, Wine Steward, or in a similar role within a high-end restaurant or hospitality setting.
  • Extensive knowledge of wine and sake, including different varietals, regions, vintages, and food pairings.
  • Exceptional communication and interpersonal skills with the ability to engage confidently with guests and colleagues.
  • Strong organizational skills and attention to detail, particularly in inventory management and cellar organization.
  • A passion for continuous learning and staying updated on industry trends.
