Dakota Hotel in Manchester City Centre is seeking a food and beverage professional with a passion for wines and great service for the role of Bar & Restaurant Manager. This senior role oversees quality and service standards across all F&B operations, including the Grill, Bar, Champagne Room, Cigar Terrace, Room Service, and outdoor Terrace.
Contract and pay Earnings are Β£40,000 plus an annual incentive bonus of up to Β£3,000. The role is a permanent contract of 45 hours per week, with fully flexible shifts, working any 5 days out of 7 including weekends.
Primary role and responsibilities
Reporting to the Hotel Manager, the Bar & Grill Manager oversees service levels across all food and beverage areas and acts as a hands-on operational leader driving excellence within the team. There is room for growth into the role of Food & Beverage Manager. The primary responsibilities include:
- Oversee F&B operations, ensuring the highest levels of service, coaching the team, and maintaining a hands-on approach to service and hosting; drive standards at all times.
- Undertake the role of Duty Manager as assigned and work with the management team (notably the Head Chef) and Reception to optimize guest experience and the resident-to-diner transition.
- Drive the commercial running of F&B, including payroll oversight (rota development and approvals), bookings diary, service sequence, and fostering a sales culture; manage supplier contracts, stock takes, and orders.
- Direct line management of the Assistant Restaurant Manager and Assistant Bar Manager, and the F&B reservations/host team; develop staff knowledge and enthusiasm for food and beverage.
- Collaborate with HR on interview processes, training, appraisals, and regular one-to-one meetings; implement training plans to ensure polished guest service across F&B.

Applicant requirements
The successful applicant will have:
- At least three yearsβ experience as a Restaurant Manager or equivalent in a full-service restaurant (required)
- At least one year in a leadership role overseeing beverage in a cocktail bar environment (required)
- Hotel environment experience with Duty Manager experience (preferred)
- Valid personal license (preferred)
- Fully flexible to work evenings and weekends (required)
