Protect standards. Drive compliance. Support exceptional guest experiences. We are seeking an experienced F&B Services Manager to play a vital role in maintaining the highest standards of food safety, hygiene, and operational compliance onboard.
The role exists to provide direct operational and policy support to the Food & Beverage Manager, ensuring the smooth, compliant, and timely delivery of daily F&B operations. Acting as a key point of coordination, the role works closely on a daily basis with the Senior Maître d’, Bars Manager, Executive Chef, and Inventory Manager to ensure effective deployment, adherence to company Policies & Procedures, and rapid resolution of operational issues. A strong emphasis is placed on problem-solving, consistency, and timely decision‑making to maintain service standards, operational efficiency, and guest satisfaction across all F&B outlets.
In addition, you will support the operational delivery of the Food & Beverage department, overseeing back-of-house crockery management, technical maintenance coordination, Integrated Pest management, and asset management, while providing guidance, training and operational support where required.
What You’ll Be Doing
- Work closely with the Food & Beverage Manager to support all F&B departments in delivering an efficient and effective daily operation, ensuring consistently high levels of service across all outlets.
- Ensure company standards and Policies & Procedures are applied consistently throughout the department, providing guidance, oversight, and timely intervention where required.
- Deputise for the F&B Manager as required, supporting decision‑making, operational continuity, and issue resolution.
- Lead the ship’s Integrated Pest Management (IPM) programme, hygiene inspections, and ongoing compliance with company standards, Port Health, sanitation, and food safety requirements.
- Act as the central point of contact for Public Health, Port Health, and Food Safety, coordinating audits, reporting, training, follow‑up actions, and timely closure of corrective actions.
- Provide hands‑on operational support across F&B, including oversight of crew and officers’ mess rooms, crockery control, equipment condition, and coordination of technical visits and maintenance.
- Support daily F&B operations and events through effective deployment, ILO compliance, menu and programme checks, meetings, and close cross‑department collaboration with Restaurants, Bars, Galley, and Inventory.
- Monitor and analyse guest feedback, CSQ scores, revenue performance, and complaints, working closely with F&B leadership and Customer Services to resolve issues promptly and drive continuous improvement.
What We’re Looking For
- Proven experience within high‑volume, 4‑star or above hotel, cruise, or restaurant & bars operations, supporting complex multi‑outlet environments.
- Strong working knowledge of Food Safety, HACP, and regulatory compliance, with the ability to apply Policies & Procedures consistently in daily operations.
- Sound understanding of USPH standards, with experience supporting compliance, inspections, and corrective actions.
- Demonstrated ability to support, coordinate, and influence multi‑disciplinary teams, working closely with senior operational leaders (e.g. Restaurants, Bars, Galley, Inventory).
- Experience managing or overseeing teams of 10+, with a focus on deployment, efficiency, and operational continuity.
- Proven strength in problem resolution, able to assess issues quickly, implement practical solutions, and escalate appropriately to ensure timely outcomes.
- Working knowledge of pest control operations and preventative measures within food and beverage environments.
- Strong organisational skills with the ability to prioritise, monitor trends, and ensure follow‑through on actions, feedback, and compliance requirements.
