The Role

As Bar Manager, you will take overall responsibility for the day-to-day operation and commercial performance of the bar, ensuring an exceptional experience for every guest while achieving sales, revenue, and profitability targets.

You will lead from the front, creating a positive and supportive team culture where colleagues feel valued, motivated, and proud to deliver outstanding service.

Working closely with the wider management team, you will identify opportunities to grow sales, manage costs effectively, maintain excellent stock control, and ensure the bar operates smoothly and efficiently.

Key Responsibilities

  • Take overall responsibility for the smooth and successful operation of the bar
  • Drive sales, revenue, and profitability through effective commercial initiatives and a strong focus on guest experience
  • Develop and implement creative sales initiatives, promotions, and opportunities to increase beverage revenue
  • Manage and stock the function bar operation
  • Set clear sales and service expectations, ensuring the team is engaged and focused on achieving business targets
  • Monitor sales performance and identify opportunities to maximise revenue and improve overall commercial performance
  • Take full responsibility for stock management, including ordering, receiving, storage, stock rotation, and regular stock takes
  • Manage stock levels effectively to minimise waste, control costs, and maintain appropriate availability
  • Work closely with suppliers to ensure quality, value, and consistent product availability
  • Manage team rotas effectively, ensuring appropriate staffing levels to meet business needs while maintaining a healthy work–life balance for the team
  • Manage payroll and labour costs in line with budget, business levels, and operational requirements
  • Lead, manage, and motivate the bar team, creating a positive and enjoyable working environment
  • Build a happy, engaged, and high-performing team where colleagues feel supported, valued, and recognised
  • Conduct regular 1–1 meetings with supervisors and team members to support performance, wellbeing, development, and career progression
  • Recruit, train, coach, and develop team members, ensuring they have the skills and confidence to deliver excellent service
  • Lead regular team meetings, encouraging open communication, new ideas, and team involvement
  • Inspire the team through strong leadership and by consistently leading by example
  • Use excellent product knowledge to drive beverage sales, upselling, and guest engagement
  • Maintain strong knowledge of beer, wine, spirits, cocktails, and other beverage offerings, sharing knowledge with both guests and the team
  • Ensure the highest standards of service, presentation, cleanliness, and operational efficiency are maintained at all times
  • Monitor guest feedback and take proactive action to continually improve the guest experience
  • Ensure compliance with Crowne Plaza brand standards, licensing regulations, health and safety requirements, and company policies
  • Work collaboratively with the wider hotel and management teams to support the overall success of the business
  • Ensure consistent service delivery across all shifts and team members
  • Create a warm, welcoming, and vibrant bar environment that encourages guests to return

About You

  • Proven experience in a Bar Manager, Assistant Bar Manager, or senior supervisory role within a busy bar or hospitality environment
  • Passionate about great, friendly service and creating memorable guest experiences
  • Commercially focused, with a proven ability to drive sales, revenue, and profitability
  • Strong understanding of stock management, cost control, and effective ordering
  • Confident in managing team rotas, payroll, and staffing requirements
  • A natural leader who enjoys motivating, coaching, and developing people
  • Passionate about creating a happy, supportive, and positive team culture
  • Strong knowledge of beer, wine, spirits, cocktails, and current beverage trends
  • Confident in developing and delivering sales initiatives and driving team engagement
  • Excellent communication, organisational, and problem-solving skills
  • Able to remain calm and positive in a fast-paced environment
