Job Overview: You are the strategic and operational leader of Rockwell Bistro & Wine Bar, overseeing all-day dining, room service and the beverage program. Building on our recent success of achieving 2 AA Rosettes in 2026, your role goes beyond standard restaurant operations: you are the curator of the entire guest atmosphere, responsible for driving a vibrant entertainment program that defines the venue's social energy. You will report to Hotel Manager.
What Your Day Will Look Like
- Strategic Leadership & Team Oversight: Lead all-day F&B operations as the key link between executive management and the restaurant, with the Breakfast Manager reporting directly to you. You own the complete employee lifecycle—from recruitment and onboarding to training, scheduling, performance management, and HR compliance—ensuring a well-trained and competent team to deliver a seamless, high-touch guest journey across every service.
- Commercial & Financial Acumen: Drive top-line revenue through proactive upselling and strategic local marketing initiatives. Implement rigorous financial controls to manage payroll strictly in line with budget.
- Drive Standards & Quality: Uphold uncompromising service, discipline, and luxury benchmarks. Take full ownership of brand compliance and quality audits, with a relentless focus on achieving and maintaining LQA and 2 AA Rosette standards across every shift.
- Beverage & Wine Expertise: Spearhead the beverage program by regularly updating and evolving the extensive and sophisticated wine list, working closely with our wine partners and suppliers. Take full ownership of negotiating commercial agreements across all beverage categories—including wine, spirits, and beer, whilst achieving and protecting our beverage Gross Profit targets.
- Atmosphere & Entertainment Curation: Take full ownership of the venue's vibe. Beyond managing flawless service, you will design, curate, and execute a compelling entertainment program that enhances the destination appeal of Rockwell Bistro & Wine Bar.
- Culinary Collaboration: Partner closely with the Executive Chef in all menu feedback sessions, structured menu tastings, and the seamless execution of new seasonal launches to maintain our 2 AA Rosette culinary standards.
- H&S Compliance: Demonstrate absolute confidence and compliance with all statutory health, safety, food hygiene, licensing and fire regulations.
