We’re set right at the heart of the Scottish Borders and offer a great place to relax, unwind and magically shut off from the pressures of modern life. We’ve been welcoming guests for well over 100 years but today is home to 132 bedrooms, 3 places to eat, 6 function spaces, leisure club, spa and oodles of outdoor space.
About the role
We’re looking for a passionate and experienced Senior Sous Chef to join the award‑winning team at Peebles Hydro. If you thrive in a fast‑paced, high‑quality kitchen environment and are ready to step into a senior leadership role, we’d love to hear from you.
What you’ll be doing
- Supporting the Head Chef in the day‑to‑day running of the kitchen
- Leading, motivating, and developing the kitchen team
- Ensuring the highest standards of food quality, presentation, and consistency
- Managing stock control, ordering, and cost efficiency
- Driving menu development and innovation
- Maintaining strict food safety and hygiene standards
- Taking responsibility for the kitchen in the Head Chef’s absence
What we’re looking for
- Proven experience as a Sous Chef or Senior Sous Chef in a high-volume, quality‑led environment
- Strong leadership skills with the ability to inspire and develop a team
- Excellent organisational and communication skills
- A passion for fresh, seasonal produce and creative cooking
- Solid understanding of food safety and HACCP procedures
- Flexibility to work across a 7‑day rota
