SUMI is entering an exciting new chapter with the opening of
our second restaurant in the heart of Marylebone in November 2026. Created by
renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group,
SUMI has earned a reputation for delivering exceptional Japanese cuisine
inspired by authentic traditions, expert craftsmanship and genuine hospitality.
Following the success of our Notting Hill neighbourhood
restaurant, SUMI Marylebone will be a gem in one of London's most exciting
dining destinations showcasing the finest seasonal ingredients, the best sushi
preparation and warm, welcoming service. We're looking for talented individuals
to join our founding team from day one, help us bring this exceptional
restaurant to life, and grow with us as we establish a new benchmark for
Japanese dining in London.
The Role
As our Sushi Sous Chef, you will be a key member of our
kitchen leadership team, leading and developing our sushi operation. You will
oversee the daily preparation and presentation of all sushi dishes, mentor your
team, contribute to menu development, and ensure consistency and excellence
across all sushi offerings. Your technical expertise, creativity and leadership
will be essential to establishing our sushi section as a cornerstone of SUMI
Marylebone's reputation.
This is an exceptional opportunity for an experienced sushi
chef who wants to step into a senior leadership role, lead a specialist team
from opening day, and progress into Head Sushi Chef and wider kitchen
leadership positions.
What You'll Be Doing
- Supervising the daily preparation and service of
all sushi menu items, ensuring consistency to brand standards - Mentoring, coaching and training sushi team members
in techniques, food safety and presentation, maintaining training records - Assisting with menu development and new sushi dish
creation, ensuring all documentation, costing and specifications are
completed - Leading by example in sushi preparation, including
rice preparation, fish handling, knife skills, sashimi, nigiri. - Conducting regular quality checks on all
ingredients and seafood, ensuring freshness and specifications are met - Checking deliveries against purchase orders and
immediately reporting any discrepancies or quality concerns - Conducting daily and weekly stock checks,
maintaining accurate records and ensuring strict FIFO stock rotation - Managing food costs through portion control, waste
reduction and responsible ingredient usage - Ensuring the sushi section remains clean and
organised, maintaining all equipment and areas to the highest hygiene
standards - Monitoring food temperatures and maintaining
accurate probe testing and temperature records - Communicating with the Head Chef regarding service
requirements and guest feedback, taking ownership of resolving quality
issues - Conducting sushi section briefings when required
and attending daily kitchen meetings to contribute ideas and suggestions - Deputising for the Sushi Chef or Head Chef in their
absence
What We're Looking For
- Proven experience as a Sushi Chef or Sushi Sous
Chef in a high-quality Japanese restaurant or Michelin-starred environment - Advanced technical knowledge of sushi preparation,
seafood quality, storage and food safety standards for raw fish - Natural leadership ability with proven experience
mentoring and developing sushi and kitchen teams - A genuine passion for sushi and Japanese cuisine
with commitment to excellence in quality and presentation - Creative flair and the ability to develop new sushi
dishes while respecting brand standards - Strong organisational skills with experience in
stock management, ordering and cost control - Exceptional attention to detail, from sushi
presentation to food safety compliance - Strong communication skills and ability to lead and
guide a team effectively - A collaborative, team-first attitude with
meticulous personal hygiene and food safety standards - Flexibility to work evenings, weekends and bank
holidays
Salary: up to Β£50,000 including service charge, plus
benefits
