SUMI is entering an exciting new chapter with the opening of our second restaurant in the heart of Marylebone in November 2026. Created by renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group, SUMI has earned a reputation for delivering exceptional Japanese cuisine inspired by authentic traditions, expert craftsmanship and genuine hospitality.

Following the success of our Notting Hill neighbourhood restaurant, SUMI Marylebone will be a gem in one of London's most exciting dining destinations showcasing the finest seasonal ingredients, the best sushi preparation and warm, welcoming service. We're looking for talented individuals to join our founding team from day one, help us bring this exceptional restaurant to life, and grow with us as we establish a new benchmark for Japanese dining in London.

The Role

A great bar service depends on what happens behind the scenes. As our Barback, you will work alongside the bartenders and front-of-house team to make sure the bar is stocked, organised and ready for service. You will help keep things running smoothly, even during our busiest shifts. This role would suit someone starting out in hospitality who is keen to learn the craft, build confidence and work towards becoming a Bartender.

What You'll Be Doing

  • Preparing the bar, fridges, coffee station and equipment before service
  • Restocking drinks, garnishes, glassware and ice throughout the shift
  • Keeping the bar and barback areas clean, tidy and organised
  • Polishing glassware and washing bar equipment
  • Preparing and delivering drinks and coffees when needed
  • Handling glass and recycling safely
  • Learning our menus, ingredients and allergen procedures
  • Working closely with the bar and floor teams to keep service moving
  • Taking part in training and building your drinks and product knowledge

What We're Looking For

Previous hospitality experience would be useful, but it is not essential. We are more interested in finding someone who is reliable, eager to learn and ready to get involved. You will need:

  • A positive, practical attitude
  • A strong work ethic and good attention to detail
  • The ability to stay organised during a busy service
  • Good communication skills and a team-first approach
  • A genuine interest in hospitality and bar service
  • Flexibility to work evenings, weekends and bank holidays

Salary: up to 15.01 p/h including service charge, plus benefits
