SUMI is entering an exciting new chapter with the opening of
our second restaurant in the heart of Marylebone in November 2026. Created by
renowned sushi master Endo Kazutoshi and part of Creative Restaurant Group,
SUMI has earned a reputation for delivering exceptional Japanese cuisine
inspired by authentic traditions, expert craftsmanship and genuine hospitality.
Following the success of our Notting Hill neighbourhood
restaurant, SUMI Marylebone will be a gem in one of London's most exciting
dining destinations showcasing the finest seasonal ingredients, the best sushi
preparation and warm, welcoming service. We're looking for talented individuals
to join our founding team from day one, help us bring this exceptional
restaurant to life, and grow with us as we establish a new benchmark for
Japanese dining in London.
The Role
As our Head Waiter/Waitress, you will be a key member of the
front-of-house team, leading by example and helping every service run smoothly.
You will combine polished, knowledgeable hospitality with a warm and natural
approach, anticipating guests' needs and making sure every visit feels
memorable.
You will support, guide and mentor the waiters and runners
while working closely with management, the kitchen and other departments to
deliver a seamless guest experience.
What You'll Be Doing
- Leading by example and delivering warm, attentive
and knowledgeable service - Supporting waiters and runners throughout service
- Training and mentoring team members to maintain
consistently high standards - Developing an excellent knowledge of the food and
drinks menus - Confidently answering questions and making
thoughtful recommendations - Communicating with the kitchen about allergies,
delays, changes and special requests - Anticipating guests' needs and responding
professionally to feedback - Ensuring the restaurant is set and presented to the
required standard - Overseeing opening, closing and cleaning procedures
- Handling orders, bills and payments accurately and
discreetly - Monitoring restaurant equipment and reporting any
requirements to management - Providing clear handovers and supporting smooth
daily operations
What We're Looking For
We are looking for an experienced hospitality professional
who enjoys leading from the floor and helping others develop.
You will need:
- Previous experience as a Head Waiter/Waitress or
Senior Waiter in a quality restaurant - Strong food, wine and service knowledge
- A warm, confident and professional approach
- Excellent communication and leadership skills
- The ability to train, motivate and support
colleagues - Strong organisation and attention to detail
- The ability to remain calm and make sound decisions
during busy services - A genuine passion for hospitality and creating
memorable experiences - Flexibility to work evenings, weekends and bank
holidays
Salary: Up to Β£17.01 including service charge, plus
benefits
