Role Description
The Sous Chef is a full-time, on-site role based at Cottiers in Glasgow, supporting the Head Chef in managing daily kitchen operations. Responsibilities include preparing and cooking dishes to a high standard, overseeing mise en place, coordinating service, and ensuring food is delivered on time during busy restaurant service and events. The role involves supervising kitchen team members, helping to train staff, maintaining food safety and hygiene standards, and managing stock and ordering as needed. The Sous Chef contributes to menu development, adapts dishes for special events and functions, and helps ensure consistency and quality across all services. This role requires strong collaboration with front‑of‑house and events teams to deliver an excellent guest experience.
Qualifications
- Strong culinary skills, including experience in high‑volume restaurant or event catering environments.
- Knowledge of food safety, hygiene regulations, and best practices in professional kitchen operations.
- Proven ability to supervise and support kitchen teams, including training and mentoring less experienced staff.
- Experience with menu execution, plating standards, and maintaining consistency during busy services.
- Capability to manage time, prioritize tasks, and work efficiently under pressure in a fast‑paced setting.
- Good communication and teamwork skills, with the ability to collaborate effectively with front‑of‑house and events staff.
- Flexibility to work evenings, weekends, and during special events based on business needs.
- Relevant professional kitchen experience; culinary qualifications or formal chef training are an advantage.
