An exciting opportunity has arisen for a Junior Sous Chef to join the kitchen brigade at an award-winning luxury hotel overlooking Falmouth Bay. This four-star AA Silver hotel, which holds 2 AA Rosettes, is renowned for its exceptional hospitality, outstanding Cornish cuisine and stunning coastal location. The successful candidate will join an experienced team of nine chefs, offering an excellent environment for learning, development and career progression.

The Role

  • Reporting to the Head Chef and working closely with the Senior Sous Chef, the Junior Sous Chef will play an important role in the day‑to‑day operation of the kitchen.
  • Support the delivery of consistently high standards of food quality, presentation and service while maintaining excellent food hygiene and health & safety standards.
  • This is a hands‑on role requiring a chef who leads by example, enjoys working within a busy professional kitchen and is committed to delivering exceptional guest experiences.

Key Responsibilities

  • Support the Head Chef and Senior Sous Chef with the daily operation of the kitchen.
  • Supervise and support Chef de Parties, Commis Chefs and Kitchen Porters during service.
  • Prepare and deliver high-quality fresh food to AA Rosette standards.
  • Ensure consistency in food quality, presentation and portion control.
  • Assist with stock ordering, stock rotation and food cost control.
  • Minimise waste and maintain effective kitchen organisation.
  • Ensure compliance with HACCP, food hygiene and Health & Safety legislation.
  • Support the training and development of junior members of the brigade.
  • Work collaboratively with the Front of House team to ensure an outstanding guest experience.
  • Deputise for senior chefs when required.

The Ideal Candidate

  • Previous experience as a Junior Sous Chef or an experienced Chef de Partie ready to progress.
  • Experience within a quality hotel, restaurant or AA Rosette environment would be advantageous.
  • Strong organisational and communication skills.
  • A genuine passion for fresh food and high culinary standards.
  • Excellent knowledge of food hygiene and kitchen compliance.
  • A positive, reliable and proactive approach to teamwork.
  • The ability to remain calm and organised in a busy kitchen environment.
