This is a key hire for the business and will suit someone who enjoys complexity, pace and scale, with a strong focus on bar-led revenue.

The role

  • Overall responsibility for three existing sites plus upcoming new openings
  • Launching new concepts and embedding consistent operational standards
  • Full accountability across operations, people and financial performance
  • Reporting directly into the Managing Director and a highly involved Founder
  • Working closely with people and marketing teams to build a people-first culture and drive revenue
  • Leading recruitment, training and development across large, multi-disciplinary teams
  • Managing multiple stakeholders and third-party partners
  • Strong focus on bar performance, wet-led revenue and commercial optimisation
  • Operating within a complex financial model with multiple moving parts

The ideal background

  • Proven experience in multi-site hospitality operations at senior level
  • Strong new opening experience is essential
  • Comfortable managing large teams at scale
  • Wet-led background with a solid understanding of food operations
  • Commercially strong with confidence around P&L and financial models
  • Good understanding of hospitality tech and operational systems
  • Strong knowledge of the London market
  • Experience in founder-led or entrepreneurial environments is an advantage
