A creative, commercially astute Head Chef is needed to lead the launch of a dual-format Mediterranean venue in East London. Casual bar + premium open-fire dining room. Shape two brands from day one. We are partnering with an ambitious group on a ground-up opening in East London. This is a chef-driven concept with serious ambition – we need a visionary leader to bring it to life.
The Venue:
- East London (prime new site)
- Open-fire cooking, seasonal British produce, Mediterranean soul
- Dual format: Ground-floor bar (small plates) + Upstairs dining (premium) + PDR
- Target 200 covers per day
The Role:
- Full creative and operational ownership – develop two distinct menus
- Recruit, build, and lead your own brigade
- Drive financials – menu pricing, labour costs, rotas
- Hit ambitious weekly cover targets
- Keep it dynamic with daily specials
