A hands-on, one-month project for an Executive Chef level Consultant Chef to sharpen the menu, systems and team of a growing Pan Asian fast casual group.

COREcruitment is partnering with an independent, owner-run Pan Asian fast casual group with three sites across North London and its own central production kitchen. The business is preparing for its next stage of growth and needs a Consultant Chef to review the food, build systems that scale and train the team.

The Consultant Chef role:

  • Review the existing core menu, improving flavour, consistency and presentation
  • Develop five to six new, affordable Pan Asian hot dishes using the current kitchen set-up and suppliers
  • Build recipe cards, dish costings and portion specs across the menu
  • Write clear kitchen SOPs for the sites and the central production kitchen, covering prep, stock, waste, cleaning schedules, food safety and hygiene records
  • Create practical procedures for site visits, audits and reporting as the group grows
  • Train the kitchen teams hands-on and support implementation on site
  • Recommend equipment or process changes where they speed up production and service
  • Present findings and a written report to the Directors, with a return visit to review progress

About you:

  • An Executive Chef or Development Chef from a Pan Asian restaurant group, premium casual or branded rather than fine dining
  • Proven in fast-paced Asian hot food: noodle, rice and grill dishes cooked to a consistent spec
  • Strong on recipe development, costings, GP and portion control
  • Experienced in writing SOPs and training teams across multiple sites or a central kitchen
  • A hands-on Consultant Chef who cooks, teaches and explains the reason behind every dish, not just writes a report
  • Comfortable working directly with owners and turning ideas into simple, repeatable systems
  • Available for 15-20 consultancy days across one month

The package:

  • 70-85k pro rata, around 5.8-7k for the one-month project
  • 15-20 consultancy days, scheduled flexibly across the month
  • Report directly to the Directors of a growing, owner-run group
  • Potential for repeat projects as the business grows and the menu evolves
  • Flexible start date, with January ideal
