Head Chef – Japanese Robata Restaurant – 65-75k East London
Lead the kitchen for a major new authentic Japanese Robata opening!
We are recruiting a Head Chef for an exciting new Japanese restaurant opening in East London. This is a high-profile opportunity to lead a team of 20 chefs in a dynamic, 200-cover restaurant serving modern Robata, skewers and sushi.
The Restaurant:
- Major new opening in a premium hotel setting.
- Modern Japanese Robata concept.
- All-day dining operation for lunch and dinner in the heart of East London.

The Head Chef Role:
- Take operational leadership of the kitchen from pre-opening through launch and beyond.
- Execute and maintain a set, high-quality Japanese menu developed by the concept team.
- Build, train, and lead a brigade of 20 chefs for a high-volume service.
- Master and oversee all Robata grill operations and traditional techniques.
- Manage all kitchen financials, stock control, suppliers, and compliance.
- Ensure seamless collaboration with the front-of-house and hotel teams.
The Ideal Head Chef:
- Proven experience as a Head Chef, Executive Sous Chef or Senior Sous Cherf in high-end Japanese restaurants.
- Demonstrable expertise in authentic Japanese techniques, especially Robata grill cooking.
- Strong track record in high-volume kitchens (100+ covers) and/or new restaurant openings.
- Excellent leader with experience building and inspiring teams of 10+.
- Commercially astute with full P&L, cost control, and compliance knowledge.
- Calm, organized, and thrives in a fast-paced, launch environment.
